We use Higashiyama’s groundwater and farm-fresh Kyoto vegetables delivered directly from Kyoto.
Kyoto Vegetables grown without pesticides and chemicals are high in nutrition and rich in flavor.
We focus on drawing out the true flavors of each ingredient.
Every ingredient nurtured with nature’s blessing blended with the culture and sincerity of the historical city of Kyoto is carefully designed to visually impress and take you on a journey through the seasons through traditional Kaiseki cuisine.

当店では東山の地下水を使い京都から直送される無農薬の京野菜を使用しております。
農薬・化学肥料を使用せずに丹精込めて作った京野菜は栄養価が高く、味も濃く、野菜本来の味を楽しめるのが特徴。
調理は奇をてらう事をしない素材そのものの旨味を引き出すことを大切にシンプルだから誤魔化しようがなく、誠実な美味しさ。
自然の恵みをいっぱいに浴びた食材に長年京都で育まれてきた文化と真心を加えた見た目にも彩り豊かな季節のお料理をご提供いたします。

Donabe Rice cooked to Perfection on Open Fire
This simple yet harmonious combination of Higashiyama’s high purity groundwater and rice is cooked right across the counter in a traditional clay pot (donabe).
Served to fully experience the natural umami flavor, the ideal viscosity and sweetness, and the perfectly plump texture of the rice itself, as well as the burnt edges called the okoge.

ふっくら土鍋ごはん
目の前で炊きあがる、ふっくら土鍋ごはん。
純水に近い東山の地下水とお米を直火にかけることで
お米の自然な旨味を最大限に引き出し、粘りがあって甘みが強く、芯まで柔らかいごはんが炊き上がります。
ごはんのふっくらとした食感と甘みとおこげの香ばしさをお楽しみください。
